Copycat Red Moose Breakfast Burrito

I have eaten a LOT of breakfast burritos. In Salt Lake and homemade. I’ve become a bit of a breakfast burrito snob so I thought I’d share my recipe with you. This one is vegetarian, but can easily be made vegan by substituting the eggs for tofu scramble and the cheese for avocado.

 

Spicy Potatoes

Ingredients:

  • One russet potato

  • Fat with a high smoke point (canola oil, avocado oil, or butter)

  • Garlic Powder

  • Paprika

  • Salt

  • Freshly ground black pepper

  • Cumin

Directions:

  1. Dice potatoes until they are fairly small bites, and heat a nonstick or cast iron skillet.

  2. Coat with oil and season well. Use paprika generously.

  3. Cook potatoes until crispy on the outside. Stir frequently. About 15 minutes (depending on size of your dice, so watch carefully)

Burrito

Ingredients

  • 2-3 eggs, scrambled

  • One flour tortilla

  • Veggie Sausage (I use Gimmie Lean, but for true RM Copycat, add fennel to the ‘meat’)

  • Cheese (shredded pepper jack or cojita)

  • Cholula (for topping, very necessary)

Directions

  1. Add all ingredients to potatoes and assemble. Top with hot sauce.

This dish is best enjoyed on a Sunday morning after a late night with friends.
